A colourful and creative take on the traditional Middle Eastern chickpea spread, served with pita bread and seasonal vegetables.

Ingredients

  • 1 tbsp tahina (sesame paste)
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • 1 garlic clove
  • 4 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • salt and ground black pepper to taste
  • pita bread to serve
  • herbs as desired

Method

  1. Place the sealed bag on a plate, with the back seal facing upwards. Put the plate in the microwave and cook for 4 minutes. After cooking, remove plate and bag from the microwave, and wait another 1-2 minutes before opening and allow it to cool.
  2. Put the edamame soybeans (setting aside a few for decoration), garlic, spices, sesame paste, oil and lemon juice in a blender.
  3. Blend until smooth and then pour into a serving bowl, adding some toasted pita bread, a drizzle of oil, spices and aromatic herbs to taste.
