Studies conducted by the Italian research institute for food and nutrition (INRAN) have shown that the belief that deep-frozen products contain fewer nutrients than fresh foods is unfounded. In particular, it is shown that deep-frozen products are more complete from a nutritional viewpoint, and the reason is simple: vegetables are harvested, cleaned, washed, quickly blanched in boiling water or steam and deep-frozen within a few hours, so that all their nutritional properties and vitamins are preserved.
