A cold pasta salad with green beans and peas, the freshness of mint and the soft and delicate touch of cherry-sized mozzarella.

Method

  1. Cook the pasta following the instructions on the packet. Drain and keep a cup of cooking water. Cool the pasta under running water to stop the cooking process, then set aside.
  2. Pour the frozen peas and green beans into a hot pan with 1 tablespoon of oil and the crushed garlic. Add the pasta cooking water and cook for about 8 minutes, stirring gently.
  3. Take a few green beans, a tablespoon of peas and the garlic (if you like its flavour, otherwise take it away) and blend with 2 tablespoons of oil and a few mint leaves.
  4. Allow the rest of the vegetables to cool, add the pasta, the pesto and the mozzarella. Mix well, season with salt and sprinkle with lemon juice.
  5. Add some mint or basil leaves, a drizzle of oil and some ground black pepper to taste before serving.
