Fried rice is one of the most famous dishes in Chinese cuisine in the world, perfect for a quick and colourful salad, which can also be enjoyed cold.

Ingredients

  • 150 g Basmati rice
  • 2 eggs
  • 150 g ham in a single slice
  • 1 tbsp sesame oil
  • 2 tbsp seed oil
  • 50 g spring onion or leek
  • 1 clove of garlic
  • 4 tbsp soy sauce
  • salt and pepper to taste
  • sesame seeds to taste
  • 1 bunch of chives

Method

  1. Rinse the rice in cold water, then cover with 300 ml of fresh water and bring to the boil. Reduce the heat to low, put a lid on and continue cooking until all the water has been absorbed (about 10 minutes).
  2. Once cooked, pour the rice into a bowl, fluff gently with a fork, and set aside.
  3. Heat the sesame oil and seed oil, add the chopped spring onion and crushed garlic. Once golden brown, add the eggs and stir with a spatula to scramble them.
  4. Remove the eggs and, in the same pan, add the peas and a small cup of water, cooking for 7 minutes over medium heat.
  5. Drizzle with soy sauce, add the rice, scrambled eggs and diced ham. Increase the heat and cook for another 5 minutes, until everything is golden and crispy.
  6. Serve with ground black pepper, chopped chives, and sesame seeds to taste.
