Rinse the spelt and cook according to the instructions on the packet. Drain when al dente and keep a small cup of the cooking water.
Pour the frozen Contorno Leggerezza Light Veggie Mix into a non-stick pan with 2 tablespoons of extra virgin olive oil, the crushed garlic and a pinch of salt and pepper. Cover and cook for about 7 minutes over medium heat, stirring occasionally.
Add the cooked spelt and the cooking water, increase the heat and cook for another couple of minutes.
Allow to cool, then crumble in the feta cheese and add the herbs.
Serve at room temperature with lime juice and a drizzle of oil.
