Chicken and vegetable couscous

A quick and tasty main dish, where the couscous absorbs all the aroma of the spices and the Vegetable Mix for Caponata adds flavour and texture.

Ingredients

  • 100 g couscous
  • 200 ml vegetable stock
  • 250 g chicken breast
  • 1 tbsp spices
  • basil to taste
  • 2 tbsp extra virgin olive oil
  • salt and pepper to taste

Method

  1. Heat the vegetable stock and, once boiling, pour it over the couscous in a large bowl. Cover immediately and leave the couscous to cook by absorption, allowing it to swell. This will take at least 20-30 minutes.
  2. Meanwhile, heat the oil in a large frying pan, toast the spices for a few minutes, then add the chicken breast cut into very thin pieces. After about 5 minutes, add the Caponata Vegetable Mix and cook for 10 minutes over medium heat, stirring occasionally.
  3. Finally, add the couscous, cooked and fluffed, to let it flavour for a few minutes over high heat.
  4. Season with salt and pepper and serve at your preferred temperature with fresh basil, pepper and a drizzle of extra virgin olive oil.
