Oriental swordfish skewers

Our garlic and parsley mix meets an oriental-inspired marinade for a fragrant and flavourful skewer.

Ingredients

  • 600 g swordfish
  • 2 limes or 1 bergamot
  • 2 tbsp soy sauce
  • 1 tbsp chopped ginger
  • 4 tbsp extra virgin olive oil
  • Black pepper to taste

Method

  1. Mix the soy sauce, parsley and garlic mix, chopped ginger, oil and citrus juice (keep a few thin slices for decoration) in a bowl.
  2. Dice the swordfish and coat with the marinade. Cover and refrigerate for 30 minutes.
  3. Assemble the skewers and cook on a very hot griddle for 10 minutes, turning them on all sides.
  4. Serve drizzled with the marinade and a few citrus slices set aside.
