Borlotti beans gnocchi sautéed with rosemary and decorated with a tempura battered peppers.
- For the gnocchi:
- 300g Orogel borlotti beans
- 150g 00 flour
- 1 egg
- salt and black pepper
- For the dressing:
- extra virgin olive oil
- battered peppers
Blend the boiled borlotti beans and make a puree. Knead it with flour, egg, salt and pepper. Make some little dumplings.
Boil the dumplings in abundant boiling water.
In a pan brown rosemary and garlic with extra virgin olive oil and add the gnocchi.
Fry the battered peppers in boiling oil and decorate the gnocchi.
Serve with a sprig of rosemary.
