Ice-cream cup with carrots, amaretti biscuits and cinnamon.
- 120g Orogel sliced carrots
- 200g vanilla ice-cream
- 40g amaretti biscuits
- 50ml Calvados
- 30g caster sugar
- 1 vanilla bean
1. Steam the carrots seasoned with sugar. Wait until cool.
Sbriciolare gli amaretti. Far ammorbidire il gelato per mezz’ora circa. Ridurre in polpa le carote precedentemente freddate.
Crumble the amaretti biscuits. Soften the ice-cream for about half an hour.
Mash the carrots.
Season the amaretti crumble with Calvados and place it in a large bowl, add the ice-cream and whisk until you have an even and smooth cream.
Serve in a cup and decorate with a vanilla bean.
